10 recipes for a veggie filled thanksgiving

Hello! How was your weekend?  Ours was pretty fantastic.  We took Hunter to the Portland Children’s Museum.  He had a crazy good time running around and exploring.  Here are a few pictures…

He was so sad when we left that he even cried.  We definitely need to go back again soon.

So Thanksgiving is right around the corner.  Have you planned what you’ll be making?  We always have two Thanksgiving feasts to attend, so between those two I’ll be making four items.  Brioche rolls for both (regular for Jacob’s side – sweet potato for mine… plus they are in the shape of a pumpkin, so cute!), cranberry sauce and a vegetable dish.  I haven’t set my mind completely on what I’ll be making, but it’ll involve brussel sprouts and maybe carrots.

I know Thanksgiving is a time for indulging a bit more.  Honestly, I’m fine with that (says the pregnant lady… 😉 ).  It comes around once (or twice in my family) a year, special dishes are cooked and family gathers for a fun time.  The last thing I want to worry about is limiting what I eat.  I tend to try a little bit of everything, or more of certain things I know I like a lot (like sweet potato casserole… yummm) and less or none of some other things (mashed potato and gravy are ehhh to me).  It all balances out in the end and is about gathering and enjoying time with one another.

On my side of the family we like to healthify things up a bit.  More veggies always + being creative with ingredients.  This year we’re going to use our bounty of preserving we did throughout the dishes, so it’ll be fun seeing what everyone comes up with.  If you’re looking to healthify your Thanksgiving table a bit more, think about adding instead of taking away.  Keep your favorites, but also add in some new veggie filled ones.  Maybe they will become a new family favorite you just have to have every year.

Here are 10 to try!  Some a bit more traditional… some not.  All would be happily welcomed to my Thanksgiving table.

Wow these all look amazing! While I do enjoy the turkey on Thanksgiving, I’d have to say the veggies are my favorite!

I agree! You have to pick and choose whats worth it. Mashed potatoes never make the cut for me. Any sort of roasted vegetable always does! That cauliflower salad looks amazing
