black pepper and molasses pulled chicken salad {secret recipe club}

If there’s been one theme with my dinners lately, it’s been quick-n-easy.

Maybe it’s my way of preparing for the little amount of time I’ll have once Hunter is here, or maybe it’s just that I’d rather be doing something else. That second thought is so not like me, I love being in the kitchen.

I guess when I have a list of 21 things to do (a self imposed list of course), dinner might come last.

You know I’m a big fan of lists and being productive, so let’s see how I did!

My Sunday to-do list

1. Clean litter box (with gloves of course!)
2. Go for run (knocked 2.2 miles out)
3. Fold/put away laundry
4. Organize clothes and drawers
5. Make ding dongs (this amazing recipe but filled with honey sweetened cream cheese)
6. Prep food for week
7. Write SRC post – half done (okay, now all done today 🙂 )
8. Prep for audition
9. Get Oregon tax return ready to mail out
10. Call Bradley method and sign up
11. Transfer $$
12. Look into cancellation of hospital child birth classes
13. Make banana nut protein muffins
14. Make german chocolate brownie bites
15. Organize bathroom drawers
16. Give Joe a bath
17. Clean shower
18. Clean downstairs bathroom
19. Take out recycling
20. Make freezer burritos
21. Figure out wall pictures – half done (picked out pictures to have printed)

I was pretty proud of all I did. The key wasn’t stopping until Jacob got home from work when we sat down for dinner. Boy did it feel good to sit down! Jacob even treated me to a needed back rub.

Back to quick and easy meals.

After a month off The Secret Recipe Club is back and I was assigned Sweet Flours to look through and secretly make a recipe from.

I almost went with a dessert, but when I saw Allison’s super simple pulled chicken recipe, I just had to make it.  Instead of a sandwich I turned it into a salad for me.

Start with a big old base of greens – spinach here!

Add some other fresh, ripe veggies.  Tomatoes!

I cannot wait for summer fresh tomatoes from the farmer’s market.  They’re huge and taste like candy.

Then the star of the show – pulled chicken.  But not any chicken ~ black pepper and molasses chicken.

Served with a toasted multi-grain baguette to sop up the extra sauce/dressing.

Black Pepper and Molasses Pulled Chicken Salad
Adapted from sweet flours

Serves 4

Ingredients

  • 3 tbsp ketchup
  • 1 tbsp cider vinegar
  • 1 tbsp honey mustard
  • 1 tbsp molasses
  • ¾ tsp chili powder
  • ½ tsp ground cumin
  • ¼ tsp freshly ground black pepper
  • ⅛ tsp ground ginger
  • 12  ounces  skinless, boneless chicken breast, cut into 2-inch pieces
  • 8 cups spinach
  • 2 tomatoes, diced
  • 1 multi-grain baguette, sliced into 4 pieces

Directions

  1. Combine first 9 ingredients in a medium saucepan; bring to a boil. Reduce heat to medium-low; cover and cook, stirring occasionally, 23 minutes or until chicken is done and tender. Remove from heat; shred with 2 forks.
  2. Plate the spinach and tomato evenly along 4 plates.  Top with chicken + extra sauce as a dressing.
  3. Serve with toasted baguette.

To be honest, Jacob had his as a sandwich, then went back and ate all the remaining chicken.  It was super tasty and tender!

I liked the salad though, and it gave me a chance to add to my 7 healthy salads to end and start the year with!

How was your weekend? Mine wasn’t all productivity, there was a lot of relaxing thrown in as well.

Sounds gorgeous. I love all the flavours with the chicken and I’m really impressed with how much you got done as well as being pregant. I’m 31 weeks at the moment and could do with some of your organisation skills!
