I’ve read it and also said it before, you can’t out train a poor diet. While I don’t think of myself as having a poor diet, it definitely hasn’t been the best lately. It’s been very bread heavy. Not that I have anything against bread. I love bread, but it doesn’t make for a very balanced diet. I need my balanced meals – protein – carbs – fat. All together at every meal/snack. Balanced filled with v.e.g.e.t.a.b.l.e.s.
Veggies make me feel light, young and energized. All great things. Not only do they make me feel wonderful, they are so so good for the body. Packed with vitamins and minerals, they’re healing too. One reason I think I rarely get sick is because of all the fruits and veggies I typically eat. I felt sick for about 2 days a couple weeks ago. That’s a lot for me, and probably from the lack of veggies! Hunter’s had a little cold and Jacob has one. I must fight it with veggies!
At the grocery store yesterday I picked up my favorite veggie fighting arsenal —> spinach.
It’s super versatile. Throw it in smoothies, eat it as a salad, scramble with some eggs, add to casseroles… there is so much you can do with this green leafy vegetable.
I started my new balanced veggie filled meal yesterday at lunch with a simple stir fry.
Egg n Spinach Stir Fry
for 1Ingredients
- 1 tsp sesame oil
- 2 eggs
- 1 cup leftover cooked brown rice
- 2-3 handfuls spinach
- 1 tbsp yoshidas sauce
Directions
- Heat a skillet over medium-high heat with the sesame oil. Scramble the eggs until set, then add the rice and spinach.
- Cook until about half the spinach is wilted. Drizzle on the yoshidas sauce and stir to combine.
Protein, carb and fat? Check! Veggies? Check! Delicious? Check-Check!

I’ve been striving to balance out my meals too. One thing I do is plan my meals based on the balance: picking out a protein, carb, fat, etc., and then making sure I have a fruit and/or vegetable along with it. Another thing I love to do is make a green smoothie if I’ve been neglecting the greens lately. It gives me a wonderful boost in energy and helps me get back in the swing of things. 🙂

Yes! The past week I’ve been all over the place. I feel SO blah today. Trying to make it to the grocery store this afternoon so I can better keep it healthy with MORE greens and LESS sugar/bread/crap!
