lemon poppyseed bread

Baking is total relaxation time for me.  When I need to get my mind off things, I head to the kitchen.

When I’m bored I will bake.  If I want to procrastinate, I will bake.

Basically I like baking.  Good for you, cause I have this yummy recipe to share.  Good for me and the hubs because we get to devour it.

Win – win right?

Okay, I totally feel like the big winner here, but you can too.

Grab 2 bowls and 1 loaf pan, then gather your ingredients and go!

Makes for a great snack any time of the day.  Whether  you need to relax, are bored, procrastinating a project or just like something tasty to munch on, this is it.  It’s lemon poppyseed bread time.

Lemon Poppyseed Bread
Makes 1 loaf

Ingredients

  • 2 cups whole wheat flour
  • 1.5 tbsp poppyseeds
  • ¾ cup natural cane sugar
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ⅓ cup butter, melted
  • 2 eggs
  • 1 cup plain yogurt
  • 1 tbsp vanilla extract
  • zest from 1 lemon
  • 3 tbsp lemon juice

Directions

  1. Pre-heat oven to 375 degrees.  Grease a loaf pan with oil spray.
  2. In a large bowl stir together the flour, poppyseeds, sugar, baking soda and salt.  In a smaller bowl whisk together the remaining wet ingredients.  Stir the wet into the dry and mix until just combined.  Pour into loaf pan.
  3. Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.  Allow to fully cool before removing from pan.

Oh yum. Lemon and poppy seed rock together! And I always enjoy breads made with yogurt. I adore baking. Its total stress free time!

I love baking! I just need more people to share it with. I would bake all day if it paid the bills 🙂 Love lemon in the summer, I will have to make this loaf.

I totally wish I had more people to share my baked goods with! When I lived at home my brothers would devour them… now it’s just me and the hubs 🙂

There is a place around here that makes the most incredible lemon poppyseed bread! I’ve always wanted to recreate it. This recipe sounds fantastic!

I just love to bake, I don’t know why, I guess the same reasons you do, and I love eating raw batter of anything so it gives me a reason to eat raw batter. haha This morning I baked some banana bread (my excuse was to make it for my husband and then use it to make banana bread french toast just for him) once that is gone I will try this recipe, I can’t make two yummy baked goods in one day!

I love anything that is lemon poppyseed!
I used to bake a lot more than I do now. Since I try to make all my meals and snacks at home I get lazy and never feel like baking anymore.

I need to change that though because right now I’m craving a huge slice of cake!

I absolutely love baking–and I’m just like you in that I love to bake anytime, when I’m bored, because I need to think, etc. It’s always relaxing to me actually!
