Thanks for all of your comments and excitement about the love it! series I started yesterday.  I’m already thinking up the next topic and can’t wait to share! 🙂

This morning I had fun dressing up as batgirl for the superhero themed day to teach body combat!

I made a couple masks yesterday (one for me, one for Hunter – he won’t touch his), and threw together a cape early this morning.

My boss even got a shot of me teaching.  I should have done a double knot on the cape, because if fell off completely by the end of the warm up.  I kept my mask on the entire time though!  Body combat is super fun and I really like the new release for 58!  And wearing a costume always rocks.

Today I wanted to share a couple of lunches I’ve been eating lately.  Lunch is without a doubt the most rushed meal for me.  I’m either just getting home and hurrying to get Hunter and myself fed, or even sometimes eating in the car on the way to pick Hunter up from my mom or SIL’s house after teaching.  If it’s in the car, a tuna sandwich is my favorite.  I’ve had lunch at home every day this week though.  Here’s a look so far for the week.

Monday: rice bowl with chickpeas, steamed carrots and cream of celery soup + 90% dark chocolate after… to balance it out 🙂

Tuesday: leftover twice baked chili stuffed sweet potatoes (picture from dinner the night before) + pear on the side

Wednesday: rice bowl with homemade black refried beans, sauted red cabbage (so yummy) and avocado + kiwi on the side

Today’s lunch pictured right above has been my absolute favorite so far.  I find rice has been helping my bottomless pit of a stomach feel fuller a bit longer.  Wishing it was brown rice, but we’re out so I’ve been a nice wife and have been cooking up the jasmine rice that we have on hand.  Sometimes I like to be nice to my husband. 😉

Having leftover rice in the fridge, a protein (a couple different kinds of beans this week), vegetables (cooked and ready to go) along with a sauce or fat to add has made my lunches super quick and delicious.  A lot of the time I’ll just eat leftovers for lunch, like I did on Tuesday since I was super rushed, but creating rice bowls has added more variety to those leftovers, turning them into new meals.

Another favorite rice bowl of mine are tuna sushi bowls!  Definitely try it out if you haven’t yet.

Also, I just looked through some old posts and 1 year ago (to the day had I posted this tomorrow!) I talked about my go to lunch.  What was it then?  A salsa veggie quesadilla.  Hunter was so little in those pictures!

What would you put in your rice bowl?  Do you find a certain meal to be more rushed than others?

Love the bat cape! We bought a sweatshirt awhile back that has a cape and batman mask for my son. He goes through phases where he loves it, then hates it. Gotta love the two year old stage!

I am so bad about putting together a formal lunch! Your bowls look delicious!! Love the costume and glad to hear the launch went well!!!
