We made it. Friday is here!! I have to work this Friday, but not as late as other days this week. Maybe I’ll get that run in that I promised myself.
I really had no excuse yesterday other than wanting to just relax last night. Okay, well that’s a good excuse in my book! I did get a quick 16 minute kick butt workout in first thing in the morning – bodyrock’s set fire workout. Here’s the workout breakdown…
1. Mountain Jump Lunge
2. Sliding Push Ups
3. Mountain Jump Lunges
4. Crunch Scissors
5. Mountain Jump Lunges
6. Reverse Push Up & Knee Tuck
I went through the circuit of exercises 4 times. My interval timer was set to 30 seconds of work, 10 seconds of rest.
It was super fun and I could feel it right away. I always like that! My total time was probably 25 minutes when I add in my warm up and cool down/stretch. I’ve been really bad about warming up lately so I’m making sure to focus on that aspect.
Breakfast post workout ~ delicious and simple puffed amaranth!
Blueberry puffed amaranth cereal
- 1 3/4 cups puffed amaranth (click here for amaranth popping instructions)
- 1 tsp cinnamon
- 3/4 cup blueberries, fresh or frozen and defrosted
- 1 tbsp shredded coconut
- 2 tbsp hemp seed
- 1 cup milk of choice
In a bowl first mix the amaranth and cinnamon together. Add in the remaining toppings then milk.
The cinnamon makes it extra special, but after a few bites I wanted a little something more. PB hit the spot. A spoonful of new homemade peanut butter swirled around took this bowl to the top.
My peanut butter making has been perfected. Coconut oil is key to making a smooth and creamy nut butter.
I even reused an old peanut butter jar for my new and improved PB.
Simple Creamy Peanut Butter
Should fill a 16 ounce jar
- 3 cups of dry roasted peanuts
- 1 tbsp coconut oil (doesn’t have to be melted)
- 1/4 tsp sea salt
Add the peanuts to a food processor and run until peanuts turn into butter. Scrape down the sides as needed.
Peanuts don’t take too long when making nut butter, about 5 minutes tops so far for me. Once creamy add in the coconut oil and sea salt. Run until fully combined and pour into your glass jar or container.
