Do you ever get a certain food stuck in your head? Like if someone’s talking about it or you see a picture of it?

I know I do.

Case in point, we were at some friend’s for dinner a couple weekends ago, and peanut sauce came up. Most of us talked about how we looooooove it (excluding the hubs), then from that point on all I wanted was peanut sauce.


Maybe I can blame this craving on being pregnant… hmmm probably not.

A few days later I threw together a peanut sauce to go with our tofu, brown rice and veggie stir fry. It was heaven in a bowl.

The hubs even ate leftovers the next day WITH my amazing peanut sauce. Since I had throw it together so quickly I just had to recreate it again, ya know for you guys. 😉


This time, in thai peanut chicken wrap form. With leftover slow cooker chicken (this recipe, just no italian seasonings), and sautéd red bell pepper and sugar snap peas lunch was a… snap!  And there’s lots of leftover sauce to drizzle on whatever you like. Or eat by the spoonful. What… I’m pregnant so it makes it totally acceptable, right?



Thai Peanut Chicken Wrap
serves 1


  • 3/4 cup shredded roasted or slow cooked chicken (or tofu to make it vegetarian)
  • 3/4 cup sautéd veggies (red bell peppers an sugar snap peas here!)
  • 1 whole wheat tortilla
  • 1 tsp lime zest
  • 2-3 tbsp thai peanut sauce {recipe below}


  1. Place the chicken and veggies in the middle of your wrap. Sprinkle on the lime zest, then drizzle peanut sauce on top.
  2. Fold your favorite way and serve with extra sauce!

The sauce is where it’s at, and this one couldn’t be any simpler! No pot or pan required.


Thai Peanut Sauce
makes a little less than 1 cup


  • 1/3 cup water
  • 1/3 cup creamy natural peanut butter (mine had a little sea salt in it)
  • 1 tbsp soy sauce, low sodium
  • 1 tsp sesame oil
  • 1 tsp lime juice
  • 1/4 tsp ground ginger
  • 1/4 tsp red pepper flakes


  1. In a microwave safe bowl combine the water, peanut butter and soy sauce. Heat on high for 1 minute, then whisk to combine.
  2. Whisk in the remaining ingredients. The sauce will thicken up naturally after a couple minutes, so make sure to let it sit for a few before serving.
