Let's Make Mac and Cheese with Chorizo!

We’re taking mac and cheese up a notch with chorizo sausage, sauteed vegetables, and an easy-to-make sauce in the blender.

The chorizo sausage, vegetables, pasta, and cheese sauce melt together and you’re left with a flavorful, delicious, and EASY dinner! Chorizo mac and cheese is such a comforting meal!

What you need for chorizo mac and cheese: chorizo sausage, mushrooms, onion, silken tofu, milk of choice, sea salt, pepper, stone ground mustard, elbow pasta, and cheddar cheese

       In a large skillet over medium-high heat add the sausage.  Cook until browned. Add the mushroom and onion into the pan with the chorizo and cook until both are soft, about 5 minutes.

      While the sausage and vegetables cook, bring a large pot of water to a boil and cook the pasta according to package directions. Drain once done cooking.

       To make the sauce blend together the tofu, milk, sea salt, pepper, and mustard. Set aside until the pasta is done cooking.

        Into the large skillet with the chorizo, add the pasta, creamy sauce, and cheese. Stir to combine

        Continue to heat over low heat for 3 minutes, or until the cheese has melted and the mac and cheese is creamy.
