       To make a batch of protein pancakes, whisk together the egg, non-dairy milk, and vanilla extract in a medium mixing bowl.

       Scoop 1 & ⅓ cups of the protein pancake mix recipe and whisk together the pancake batter. Let the batter rest while the pan heats up.

       Heat a large skillet over medium heat and add a bit of butter to the heated pan. Scoop ¼ cup batter per pancake and cook for 3-4 minutes (until you see bubbles begin to form), then flip.

       Cook for 3-4 minutes on the second side until the pancake is cooked through in the center. Repeat with any remaining batter.
