Healthy Breakfast Cookie Recipe

This healthy breakfast cookie recipe can be prepped in advance for busy mornings!

Naturally sweetened banana breakfast cookies are the perfect addition to your morning! They are vegan and gluten free, too!

INGREDIENTS: – ripe bananas – flaxmeal – natural peanut butter – coconut oil – pure vanilla extract – rolled oats – cinnamon – baking powder – baking soda – raisins – salted roasted cashews, chopped

Step 1: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Mix the flaxegg by combining the ground flaxseed with 6 tablespoons of water.

Step 2: In a large mixing bowl mash bananas fully. Add the flaxegg, peanut butter, vanilla, melted coconut oil into the mashed banana bowl, and fully mix the wet ingredients together.

Step 3: Into the same bowl, add the oats, cinnamon, baking powder, and baking soda. Mix well to combine. Stir in the raisins and cashews.

Step 4: Using a spoon or large cookie scoop, add cookie dough to the prepared baking tray. Bake for 12-14 minutes until slightly golden!
