How to make almond flour oat cookies
Step 1: Preheat the oven to 350 degrees F and set aside 2 Larder & Vine sheet pans (line with parchment paper for quicker clean up).
Step 2: In a large bowl add the butter, sugar, egg, and vanilla and mix with a spoon first, then whisk for 2 minutes until fully combined.
Step 3: Add the remaining dry ingredients in, and mix until combined. Mix in the raisins.
Step 4: Using a small cookie scoop, scoop cookie dough balls onto the prepared baking sheets with space between each cookie.
Step 5: Bake for 9-11 minutes, until the edges are just barely beginning to get golden edges. Let the cookies cool on a wire rack for 10 minutes, then enjoy!

I followed the recipe with the addition of 1/2 teaspoon of cinnamon and 1/2 cup of pecans. Came out perfect. I think next time I will try it with cranberries instead of raisins and walnuts instead of pecans. The cookies came out beautiful despite not having the cookie sheet listed here. They held together perfectly.

These cookies are so delicious! I double the recipe, add 1 tsp of cinnamon, 1/4 tsp of nutmeg & reduce the sugar to 2 TBSP. My kids & I usually finish it in 2 days 😋.
