Rice noodles with stir fry beef, loads of veggies, eggs, and the perfect simple-to-make pad Thai sauce.  It’s a winner of a dinner you’ll want to enjoy on repeat!

My favorite Thai noodle dish is pad Thai.

If you’ve been here on my site, you may see a theme that anything peanut sauce is my favorite thing.

While this less-than-30-minute recipe doesn’t actually use a delicious creamy sauce made with peanut butter, it gives a slight nod towards it flavor-wise with the crunchy dry-roasted peanuts and touch of peanut-y flavor in the pad Thai sauce.

Thai rice noodles soak up the delicious sauce. It’s packed with fresh vegetables and thinly sliced flank steak or sirloin steak.

How to make this dinner fast

The best thing about this dinner is that it’s perfect for busy weeknights! So many parts of this dinner can be prepped ahead, making it come together quickly.

Two ways to make this dinner even faster:

  • Mix the pad Thai sauce ahead of time and store it in a mason jar in the fridge until it’s time to use.
  • Prep and slice all the vegetables in advance so they’re ready to go.

What you need for this easy beef pad thai recipe

How to make homemade authentic pad Thai with beef

  1. Bring a large pot of water to a boil, and cook the rice noodles to al dente. Once done cooking, drain and rinse the noodles in cold water (this will help with sticking). If not using the noodles soon, toss with a little sesame oil to prevent sticking.
  2. While the noodles cook, prepare the pad Thai sauce. In a small bowl combine the pad Thai sauce ingredients. Mix fully and set aside.
  3. Crack the eggs into a bowl and beat slightly. Set aside.
  4. In a large skillet or large wok, heat 1 tablespoon of oil over medium-high heat. Saute the beef for 6-8 minutes, until cooked, then remove from the skillet and set ahead.
  5. In the same skillet, add the remaining oil and add the carrot, bell pepper, and onion. Saute for 8-10 minutes, until the vegetables are slightly softened.
  6. Move the vegetables to the edges of the pan and add the beaten eggs into the center of the pan. Scrambled for 2-3 minutes until cooked, then stir in with the vegetables.
  7. Add the cooked beef and noodles, along with the pad Thai sauce. Stir and warm through for a couple of minutes to allow the flavors to combine.
  8. Serve your beef pad Thai noodles along with the chopped peanuts and a squeeze of lime juice. Enjoy!

Substitutions

Below you’ll find a list of substitutions that will work well in this beef pad thai recipe.

Rice noodles – Traditional pad Thai uses pad Thai noodles, but you can use wide rice noodles or thin silky rice noodles as options here.

Stir fry beef – Any steak that can be sliced thingly is an option here. You can also make this recipe using lean ground beef, or mix up the protein and use chicken for a chicken pad thai.

Carrot – A good substitute or addition for the carrots is bean sprouts

Green onion – Chives and garlic chives are good substitutes for green onions. They offer a more mild flavor.

Dry roasted peanuts – Roasted cashews are good alternatives to peanuts.

Coconut aminos – Try soy sauce in place of coconut aminos in this tangy sauce.

Maple syrup – Honey is a good alternative, as is brown sugar.

Fish sauce – You can replace fish sauce with oyster sauce in equal amounts.

Peanut butter – Try almond butter or sunflower seed butter in place of the peanut butter.
