Happy Monday! Hope your weekend was relaxing and fun. We got away to the lake house for some family time. Just what we all needed.
This week is my birthday week! Typically I’m not a big fan of celebrating my birthday, but for some reason this year I am. And to celebrate I want to share some goodies with all of you.
Everyday this week, I will have a different prize to win. The giveaways will only last 1 day. So it will be announced in the morning, then the winner will be selected the next morning when the new giveaway goes up.
Not only is it giveaway week on the blog, I’m sharing goodies will all of my classes this week. Today they’re getting chocolate trail mix clusters. They are soooooo good!
And since most of you won’t be in my classes, the first giveaway to kick off the week is one dozen chocolate trail mix clusters!

Chocolate Trail Mix Clusters
makes about 25 clusters
Ingredients
- 1 bag dark chocolate chips
- 2 cups raisins
- 1 cup dry roasted peanuts
- 1 cup raw almonds, chopped
- 1/2 cup roasted sunflower seeds
- 1/4 cup unsweetened shredded coconut
Directions
- Fill a medium pot with 2 inches of water. Place a large glass bowl over it. Make sure the bowl does not touch the water. Place on the stove over medium heat. Add the chocolate in. Stir as it melts.
- Once melted, add in all the remaining ingredients.
- On wax or parchment paper, drop about 2 tbsp of the mixture. Repeat until no more remains. Allow to harden. You can also place them in the fridge or freezer to cool faster.
I made a triple batch of these. They won’t last long!

Oh, those look AMAZING!! My birthday is in August and I try to always have a raspberry pie to go with; I grew up in NY and that was when raspberries were ripe, and easy to find!
Mmmmm that sounds delicious. I’m not sure I’ve ever had a raspberry pie. Marionberry is one of my favs with locally grown berries.
Happy early birthday!! My husbands birthday is the same day as yours:) My birthday is February 21st and I always look forward to going out to dinner somewhere nice with my husband. Although this year I had the flu and we had to cancel our plans, no fun at all. Instead, I’m celebrating my birthday at the same time as my husbands and we are going out this weekend!
My birthday is on June 7th! Every year my mother takes me out for breakfast, last year I was 300 miles away and she still went to breakfast on my birthday while I went to the same place here and we talked, it was so sweet! I look forward to that every year!

YUM! My birthday is December 24th. Everyone gets wrapped up in Christmas food, I insist on having PB Shrimp and noodles on my bday. It’s something I started when I was in high school, mainly because I love shrimp and it was a meal far away from turkey. I love turkey and big meals, but I wanted to choose something for my birthday.
It’s my birthday week too! Well, technically it’s next week since my birthday is on Sunday the 28th – but I always count the weekend as part of the week it follows. Happy Birthday to us!
