Every time I make this recipe, I love it even more. The flavor combination of buffalo chicken with spaghetti squash just can’t be matched!

And the nutrition nut in me loves that it’s loaded with veggies and protein.

If you’re new to spaghetti squash or learning to like it, this recipe will convert you. The spaghetti squash melts together with the shredded chicken.

They work so well together and complement each other perfectly.

You are left with a creamy, dreamy, and slightly spicy dip.  But not too spicy!  It’s just the perfect amount of buffalo flavor heat and just WORKS.

How to make this healthy buffalo chicken dip recipe!

  1. Preheat your oven to 400 degrees F. Slice the whole squash in half lengthwise, remove the seeds and ribbing, and drizzle with oil and sea salt. Place flesh side down on a parchment paper-lined baking sheet, and bake until tender. This will take about 30-40 minutes depending on the size of your squash to end with tender spaghetti squash.
  2. Once the spaghetti squash is done and the strands are tender, use a fork and remove the spaghetti squash noodles into a large bowl. Add the chicken, dried chives, kefir ranch, and buffalo sauce. Mix the creamy buffalo sauce ingredients together fully.
  3. Pour the spaghetti squash mixture into a large baking dish or casserole dish and bake for 15 minutes to warm through. Serve with your favorite dippers, or enjoy it by itself!  If you love blue cheese crumbles, add them and a drizzle of ranch on top of the buffalo chicken mixture!

NOTE: While this recipe does not include cheese, you could definitely add some shredded mozzarella cheese, cheddar cheese, bleu cheese, or pepper jack cheese and make it into a cheesy buffalo chicken spaghetti squash dip!

Substitutions

Below you’ll find a list of substitutions that will work well in this best buffalo chicken dip recipe.

If you try something different out, please leave a comment below letting us all know how it turned out!

Spaghetti squash – A healthy vegetable option to replace the spaghetti squash could be steamed mashed sweet potato or cauliflower rice.  Both would pair really well with the buffalo wings flavor.

Chicken breast – Instead of cooking your own chicken, shred a rotisserie chicken, use canned chicken, or cook chicken thighs in a slow cooker all day and then shred. Ground turkey, ground beef, or ground chicken work great here too!

Dried chives – Feel free to use fresh chives, fresh green onions, onion powder, or garlic powder to replace the dried chives.

Avocado oil – You can use extra virgin olive oil, or melted coconut oil instead of avocado oil

Kefir ranch – Use your favorite bottled ranch dressing instead here.  You could also swap in blue cheese dressing. You can also opt to use full fat cream cheese, sour cream, blended cottage cheese, or plain greek yogurt and add ranch seasoning into it.

Buffalo sauce – Don’t really like spicy food? Use BBQ sauce as a great option or find a mild or medium buffalo sauce to use (frank’s hot sauce is great!)
