Easy One Pan Chorizo Baked Eggs Recipe with Veggies

When I first made this baked egg dish, I was a little skeptical about how my kids would feel about it. I had the idea for it in my head and thought it would be tasty, but when you’re experimenting and trying new things, you never know what the outcome will be the first time.

Not sure why I worried, all 4 of my kids, my husband, and I couldn’t get enough of this meal!

I should have known – we love my chorizo breakfast burritos, chorizo breakfast hash, and chorizo mac and cheese – it’s such a good flavor that brings so much to a dish!

By using a homemade chorizo spice mixture, you can control the heat and spicy level. It’s a medium heat spice level but can be adjusted up or down too.

Once the chorizo is mixed and cooked in a frying pan with your veggies, you add the eggs, do a quick bake and everything is done and ready to be served up!

Full of flavor – The baked eggs soak in the chorizo spices and taste so good! The chorizo is heavily seasoned giving loads of flavor to everything in the pan.

Once the chorizo eggs are ready, let everyone pick how they want their meal served up – some will love flour tortillas or corn tortillas and enjoy it as breakfast tacos – others will enjoy it with a slice of crusty bread, and maybe another will enjoy it with a generous sprinkle of parmesan cheese, cheddar cheese or cotija cheese!

How to make this easy breakfast

Step 1: Preheat the oven to 350 degrees F. In a bowl add the pork and chorizo seasonings. Mix thoroughly together so that the spices are distributed evenly throughout the meat.

Step 2: Heat a large oven-safe skillet to medium-high heat and add the oil and chorizo mixture. Break up the meat into small pieces with a wooden spoon and then add the kale and onion along with a pinch of salt. Cook the chorizo and veggies, stirring often, until the pork is no longer pink and the vegetables have softened.

Step 3: Add the tomato paste and water and stir. Turn off the heat and make 6 shallow holes. Crack the eggs into the holes and bake in the middle of the oven for 13-17 minutes, or until the egg whites are set and the yolk is cooked to your liking.

Step 4: Sprinkle a little sea salt on the eggs and serve with toast, avocado, cilantro, and green onion!

Serving suggestion

This meal makes an awesome sunday brunch recipe and can be the star of the meal!

Serve it with lots of toppings and sides to turn it into a stunning big meal.

Have sides like avocado, guacamole, sour cream, sliced red onion, black beans, diced cherry tomatoes, tortillas, salsa, fresh cilantro, shredded cheese, bread, green onion, and tortilla chips ready to enjoy with it.

How to store

Leftovers keep well stored in the fridge. Once cooled to room temperature, add to an airtight container and store in the fridge for up to 5 days.

Reheat in a warm oven until warmed through.

Substitutions, optional variations & dietary adjustments

Below you’ll find a list of substitutions that will work well in this spanish chorizo brunch recipe.

Ground pork – You can use any ground meat in place of ground pork – try it with beef, turkey, or chicken!

Avocado oil – Olive oil is a good option to use here too.

White onion – Yellow onion or red onion work great here too.

Kale – Swap in a different leafy green like swiss chard or spinach for the kale. You can also add lots of vegetables to this dish – try mushrooms, zucchini, bell pepper, or chopped tomatoes.

Tomato paste – You can swap in tomato sauce for the tomato paste. If you use tomato paste, you won’t need to add any water. A little red enchilada sauce works too!
