A great way to flavor steak for your next burrito bowl is with this easy recipe! We’re taking Chipotle’s steak flavors, and turning it into a super simple crockpot chipotle carne asada recipe. Start it in the morning, and enjoy it later in the day with all the fixings.

If there’s one thing I love more than popping into a Chipotle, it’s having a flavorful and simple recipe that makes me think I’m at my favorite take-out spot!
Crockpot recipes simplify meals, and this easy carne asada makes homemade healthy burrito bowls easy for any weeknight meal.
All you need to do is prep the quick marinade, add the steak into it, and then pop the entire thing in the crockpot to cook hands-free!

What type of cut of meat to use
The cut of beef used will determine what the end result will be like. I’ve used skirt steak, flank steak, and top sirloin steak. All work great with this recipe!
A couple of other options that would work well here include flat iron steak and fajita beef (steak cut into thin strips).

- ancho chili powder
- ground cumin
- dried oregano
- garlic
- navel orange
- limes
- sea salt
- black pepper
How to make chipotle steak in the crockpot
- In a small bowl, add the olive oil, ancho chili powder, cumin, dried oregano, minced garlic, orange juice, lime juice, sea salt, and pepper. Stir to combine the wet ingredients together.
- Into a large bowl or large ziploc bag, add the steak and pour the mixture over. Turn the steak a few times to fully coat it, and then allow it to marinade for at least 30 minutes, or overnight.
- Into a crockpot, add the steak and any remaining marinade. Cook on LOW for 6-7 hours, or high for 3-4 hours. The carne asada meat is done when it easily pulls apart. You can shred the beef, or place it on a cutting board into smaller pieces.
- Build your carne asada bowl by adding the flavorful beef, cilantro lime brown rice, black beans, pico de gallo, green onions, fresh cilantro, sour cream, and cotija cheese into a bowl. It makes the best carne asada tacos as well!

Different ways to cook carne asada
Use the same marinade, but instead of cooking the steak in the crockpot for shredded beef, cook it over medium-high heat in a cast iron skillet, or on an outdoor grill!
Look for an internal temperature of 145 degrees F for a medium cooked steak.
How to store
Store leftover meat in the fridge once fully cooled. Add to an airtight container and keep refrigerated for up to 5 days.
Store in the freezer for up to 6 months!
Substitutions

Steak – Alternatives to top sirloin steak include skirt steak, flank steak, flat iron steak and fajita beef strips. While you can use a larger roast if that’s the only option you have, this recipe works best with smaller cuts of meat.
Olive oil – Avocado oil or any neutral oil will work here!
Ancho chile powder – Chipotle peppers in adobo sauce (fresh or powder) are a great substitute for ancho chile powder. Regular chili powder works as a substitute as well.
Fresh garlic – You can replace fresh garlic with garlic powder or granulated garlic. Onion powder can be used here as well for some extra flavor.
Orange – You can substitute more lime juice or lemon juice for the orange juice. If you don’t have any citrus on hand, try soy sauce or coconut aminos for a more deep flavor profile.
Lime – Lemon juice is a great alternative to lime juice. White vinegar or apple cider vinegar can work as well.
