Happy Saturday! Normally I don’t pop in over the weekend but I have to tell you about the week.
It was pancake week. And a delicious week it was.
Every day I made a different pancake from one easy mix – my homemade whole wheat mix for yogurt pancakes. The add ins were simple. The outcome was delicious. I think pancake week should become a normal thing. I didn’t put any topping on my pancakes (they were yummy on their own), but I’ve included suggestions if you are a topping person. Let’s go!
Monday: raspberry pancakes
Topping suggestions: unsweetened shredded coconut + stewed and mashed raspberries
Tuesday: cocoa banana pancakes
Topping suggestions: peanut butter + granola
Wednesday: oatmeal, apple and cinnamon pancakes
Topping suggestions: apple sauce + granola
Thursday: peanut butter and jelly pancakes
Toppling suggestions: peanut butter + stewed and mashed strawberries
Friday: chocolate chunk, peanut butter and banana pancakes
For the yogurt in the batter use 1 vanilla chocolate chunk chobani champions greek yogurt + ¼ cup plain yogurt. Also into the batter add in 1 tbsp dark chocolate chips, 2 tbsp natural peanut butter, and ½ banana chopped.
Topping suggestions: peanut butter + chocolate chips + banana chunks + chopped peanuts
Friday was my absolute favorite pancake day! I felt like I was eating dessert.
