Healthy Ground Beef Fajitas Recipe – Skillet Meal!
Move over steak fajitas, this easy peasy ground beef fajita recipe is here to stay!
It’s super kid friendly, and great for younger kids too. Sometimes steak can be harder for little ones to eat, but the size and texture of ground beef is an easy alternative.
If you keep ground beef on hand or in your freezer, this easy dinner recipe is one to keep in rotation or your next taco Tuesday night!
What you need for 20 minute ground beef fajitas

- avocado oil
- ground beef
- homemade fajita seasoning (see below for individual seasonings)
- sweet bell peppers – use a green bell pepper for a classic fajita recipe, or opt for yellow, red or orange bell peppers for extra color
- yellow onion
- corn tortillas
- favorite toppings
How to make this ground beef fajita recipe
Step 1: In a large skillet over medium-high heat, add the oil and pound of ground beef. Break the meat up with a wooden spoon, and sauté for 5-7 minutes until there is no pink remaining. Add the fajita seasoning and stir to combine.
Step 2: Remove the seasoned ground beef from the skillet and set it aside in a small bowl.
Step 3: Into the same hot pan, add the sliced peppers and sliced onion, along with a pinch of sea salt and pepper. Cook the fajita veggies until the onions have softened and have some browning on them, and the peppers are beginning to soften, but still maintain their shape. Set aside when done.
Step 4: Warm the tortillas in a medium heat skillet.
Step 5: Serve your ground beef fajitas with sour cream, the seasoned beef, cooked bell peppers and onions, pico de Gallo or salsa, fresh cilantro, fresh lime juice, and any other favorite taco night toppings!
NOTE: Don’t have fajita seasoning on hand? Use these individual seasonings instead:
- 1 ¼ tsp chili powder
- 1 ¼ tsp cumin
- 1 ¼ tsp garlic granules
- ¾ tsp dried oregano
- ¾ tsp paprika
- ½ tsp onion powder
- ½ tsp sea salt

Different ways to serve ground beef fajitas
Take the beef and veggie mixture and turn it into taco salad, fajitas quesadillas, or add it into a breakfast omelet with hot sauce!
Once the meat, peppers and onions are cooked and seasoned, they can easily be added into many different meals.
How to store
This recipe is fantastic for meal prep because it stores really well.
Leftover fajita meat and veggies should be cooled to room temperature and added into an airtight container. They will stay fresh for up to 5 days.
You can also freeze this for up to 6 months! I suggest freezing the meat and cooked veggies separately. Place in a freezer bag and be sure to label and date it.
Reheat leftovers in a medium high heat skillet until warmed through.
Substitutions

Avocado oil – Extra virgin olive oil or coconut oil are good alternatives for avocado oil.
Ground beef – This recipe works well with ground turkey, ground chicken, ground bison, and ground pork. Any ground meat will work in its place!
Homemade fajita seasoning – Instead of making your own fajita seasoning, you can definitely use a store-bought option. You’ll also find the individual spices listed in the notes section of the recipe card below.
Bell peppers – Any color of bell pepper will work here. You can also include hotter peppers like jalapeño or habanero.
Yellow onion – Red onion, white onion and shallots are all good options to replace white onion.
Corn tortillas – Flour tortillas or gluten free tortillas work in place of corn tortillas!
