We’re turning traditional peanut butter cookies into a gluten free, low sugar, and higher protein treat! Thanks to peanut powder (like pbfit peanut butter powder) and protein powder, each cookie has 8 grams of protein.

- natural peanut butter
- oat flour
- vanilla protein powder
- baking powder
- dark chocolate chips
- coconut oil
How to make this peanut butter powder cookie recipe
Step 1: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Step 2: In a large bowl add the water and powdered peanut butter. Whisk together to combine.
Step 3: Into the same bowl, add the maple syrup, vanilla extract, and peanut butter and mix the wet ingredients fully.
Step 4: Next, add the oat flour, protein powder, and baking powder and stir together until the dry ingredients are fully combined.
Step 5: Spoon batter with a cookie scoop or spoon to the prepared cookie sheet. Roll into ball, and then flatten with your hand. There should be 6-8 cookies. Use a fork to press in a crisscross pattern for a regular peanut butter cookie look, or simply smooth and press down.
Step 6: Bake in the preheated for 9-11 minutes, or until the peanut butter cookie dough looks set and golden.
Step 7: Allow cool to room temperature on a wire rack. Enjoy as is, or dip in melted chocolate!
Step 8: To add a chocolate coating, melt the chocolate chips and coconut oil together. Dip half of the cookie into the chocolate
Step 9: Cool on a wire rack until the chocolate is set. For quicker cooling, chill the cookies in the fridge. Enjoy!

Since they keep well frozen, feel free to make a big batch to store and enjoy whenever you’d like them!
How to store cookies
Once the cookies are cooled fully, they can be stored on the counter in an airtight container, in the fridge or in the freezer!
They will stay fresh on the counter for 4 days, in the fridge for 7 days, and frozen in the freezer for 6 months!
Substitutions
Below you’ll find a list of substitutions that will work well in this healthy classic peanut butter cookie recipe.

Powdered peanut butter – Peanut flour, peanut butter protein powder, and powdered peanut butter are all very similar products and will all work really well in here for the powdered peanut product.
Maple syrup – Honey and agave work as liquid sweeteners. Brown sugar, coconut sugar, or white sugar will work as well, but you’ll need to add a little more water in to replace the lost liquid.
Peanut butter – Creamy peanut butter or chunky peanut butter both work great! You can swap pb for almond butter, cashew butter, tahini, or sunflower seed butter too.
Oat flour – Almond flour works as a great alternative to oat flour. Your favorite gluten free flour mixture will work too. You can also replace whole wheat flour and whole wheat pastry flour in as well. All-purpose flour would work too! For a more chewy cookie, try quick oats in place of oat flour.
Vanilla protein powder – Chocolate protein powder or natural protein powder will work here. Use your favorite protein powder! If you opt for an unsweetened protein powder, add 1-2 more tablespoons of sweetener in to match the sweetness you’d get from a sweetened protein powder. If you don’t want to use protein powder, increase the oat flour in the recipe to replace the protein powder.

Tasty dough easy to prep! Added some chocolate chips cooked extra time …cookie dough still very soft on the inside! Should I have been expecting soft soft cookie? I prefer a drier crispy cookie …suggestions for that?
Hey BJ! love the chocolate chip addition. The cookies aren’t super crispy, slightly soft but once they’ve cooled they’re easy to handle and not super soft. Maybe the chocolate chip addition changed the texture slightly? You could try adding a few minutes to the bake time too!
