SUMMER CROSTINI! 2 ways. Peach🍑and tomato🍅

Which would you try first?

1. To make the crostini, thinly sliced a baguette and drizzle with olive oil.

2. Add to a baking sheet and toast in a 400 degree oven for 5-8 minute, or until crispy.

3. Dice a large tomato and a peach and add to separate bowls. Add 1 oz crumbled goat cheese to each, a pinch of sea salt and stir.

4. Spoon the peach mixture and tomato mixture over the toasted crostini, and drizzle with balsamic vinegar. ENJOY!

These babies made it into my cookbook for good reason. They’re so simple to mix up (1 bowl!), more protein packed than your average muffin, and just sweetened with a little maple syrup!

Here’s everything you need for them:

PREP 🍓🍓STRAWBERRIES🍓🍓 WITH ME!

Here’s how I make strawberries last for a week+

1️⃣ Soak strawberries in water for 1-2 minutes.

2️⃣ Drain and rinse.

3️⃣ Lay on a towel for at least 2 hours to dry, but the longer the better!

4️⃣ Slice off any bad/soft spots and cut into halves or quarters.

5️⃣ Line glass storage with a paper towel, add strawberries + maybe another paper towel, add lid and store in fridge!

Do you have a favorite way to prep and store strawberries? I know there are many days, but we love this way because they last and there’s been zero waste!

Lots of home cooking happening here this week!

Here’s what’s on the dinner menu:

✨Traeger burgers + Caesar salad
✨Chicken fajita tacos (on the blog, but with steak)
✨Pork, ratatouille + dilly potatoes
✨Lamb meatball bowls (on the blog)
✨Thai peanut chicken noodle bowls
✨Traeger salmon (on the blog) + pasta salad
✨Quesadillas using leftover meat & veg

The only way I’ve been able to grocery shop once a week is to have a plan + be flexible with it.

I move the meals around throughout the week and I’m not tied to dinner on a certain night.

Works for me!

SUMMER STAPLE = Mexican Street Corn Salad. Here’s my go to recipe!👇🏻👇🏻

GATHER

4 cups corn cut off the cob (about 4-6 corns depending on size) (can use frozen, defrost and drain)
1 tbsp avocado oil
½ tsp sea salt
½ tsp garlic granules
1 red bell pepper, diced
¼ cup green onion, minced
¼ cup cilantro, minced
4 ounces cojita cheese

Dressing
2 tbsp avocado oil mayo
2 tbsp plain whole milk yogurt
1 lime, juiced
¼ tsp chili powder

HOW TO

1. Heat a large pan over medium-high heat and add the oil. Once the pan is hot, add the corn kernels, sea salt and garlic granules. Saute and stir every 2 minutes, until the corn is slightly golden. If using fresh corn, this will take about 6-8 minutes. If using frozen corn, this will take a bit longer. Cook until the kernels get some color on them, then remove from heat to slightly cool when done.

2. As the kernels cook, chop the bell pepper, green onion and cilantro and add to a bowl. Add in the cojita cheese as well.
Whisk together the mayo, yogurt, lime juice and chili powder for the dressing.

3. To finish, add the slightly cooled corn in with the veggies and stir in the dressing to combine.

Have you tried this way of cutting corn off the cob?

Place a small bowl upside down to use as a stand inside a larger bowl. Slice the corn off the cob and watch your corn kernels NOT flying everywhere.

When I was packing lunch boxes for my kiddos during the school year, once or twice a month I’d make pigs in a blanket.  Since they’re home for all lunches, we’re keeping that fun lunch tradition going, but with a twist!

BEEF STICKS PIGS IN A BLANKET

GATHER

4 Boblinks beef sticks
1 Immaculate crescent rolls (any brand will do, I just like their simple ingredients)

HOW TO

Preheat the oven to 375 degrees F.  Line a baking sheet with parchment paper.
Slice the beef sticks in half. Open the crescent roll packaging and separate into 8 triangles.  Place a half beef stick at the large end of the triangle and roll it into the crescent roll.  Repeat and place all of the prepared beef stick rolls on the baking sheet.
Bake for 9-11 minutes, or until the crescent rolls are golden brown.
Serve with ketchup and all your favorite colorful veggies on the side!
