What I’ve been up to the past week… mushroom birthday party prep! And getting the house all ready (construction is DONE!). It’s been a while since we’ve done a fun themed birthday party and bringing my mushroom loving girls dreams to life was the best.

DEETS

Cake: vanilla cake with raspberry jam layers with a chocolate ganache frosting turned into a stump with chocolate “bark”. Meringue mushrooms that were my absolute favorite!

Decor & activities: Mushroom piñata, big paper mache mushrooms, mushroom banner, wood mushroom painting & mushroom party bags.

If your salads aren’t leaving you full for at least a few hours, then you’re not doing your salads right! The key to a meal size salad is to make sure you have enough protein, fat, fiber, and of course, loads of veggies. That’s going to help you to feel full for longer.

I always with my salad first, and then I add something munchy on the side. Maybe I have some chips. Maybe I have some avocado toast or roasted potatoes. Maybe it’s some fruit, but there’s always something extra to give me more energy to go along with it.

If you’re a fan of regular burgers using ground beef and are hesitant to try cooking with lean meat, have no fear! No dry burger here + loads of flavor!

90% of the time when we have burger night, I take burger patties and put them on top of a bed of lettuce. It’s an easy dinner served in a healthier way.  Make it even easier without shaping into burger patties!

It's Burger Week! 🍔🍔🍔 I'm pumped to share a different burger recipe every day this week, and for Day 1 we're starting with our dinner from last night = TRAEGER BURGERS.

Always a hit with the family. Super easy to make. So good!  If you don't have a Traeger, no worries. Pop them on the BBQ, cook them on the stovetop, or broil them in the oven.  The mixture is delish, so don't skip that.

Level up your taco salad with this cilantro lime dressing - seriously so delish!  Follow @fitmamarealfood for more feel good food!

This sauce couldn’t be easier to make but adds SO much to meals. It makes a great salad dressing, dip, or spread for fish tacos, sandwiches, and wraps.

Can it add flavor to everything? Pretty much! At least for savory dishes.

The lime juice keeps it fresh tasting.

The cilantro leaves add an herby element and brighten it up.

The mixture of mayo and kefir makes it a creamy sauce, while also offering up some beneficial probiotic goodness (thanks kefir!).

You could totally use greek yogurt here too!

Cilantro Lime Dressing

INGREDIENTS
½ cup avocado oil mayonnaise
¼ cup kefir
2 tbsp lime juice
½ cup cilantro
⅛ tsp sea salt
⅛ tsp pepper

DIRECTIONS
1. Into a blender add the mayo, kefir, lime juice, cilantro, sea salt, and pepper. Blend for 10-20 seconds to fully combine the sauce together.

2. Pour the sauce into a bowl for serving, or a jar for storing.

Herby Salmon with Mayo - full recipe below!  Follow @fitmamarealfood for more easy recipes. 😋

I feel like mayo is one of those foods you’re either okay with, or... kind of grossed out by it.  Don’t knock this recipe before you try it!  Mayo on salmon isn’t much different than if you’re adding oil or butter.  Makes a tasty topping, especially with the herb mixture we’ve got here.

HERBY SALMON WITH MAYO
Serves 8 (use a smaller piece of salmon for less servings)

INGREDIENTS
2.5 lb salmon
⅓ cup avocado oil mayonnaise
1.5 tbsp italian seasoning
½ tsp garlic granules
½ tsp sea salt
¼ tsp black pepper

DIRECTIONS
1. Preheat oven to 425 degrees F. Line a rimmed baking sheet with parchment paper and place salmon skin side down on the prepared baking pan.

2. Take the mayo and spread it evenly with a brush over the top of the fish.

3. In a small bowl combine the Italian seasoning, garlic granules, sea salt, and pepper. Mix then season salmon with it by sprinkling it evenly on the mayo. The seasoned mayo mixture is now ready to go!

4. Bake salmon for 13-15 minutes, until the fish flakes and looks opaque. For best results, use a meat thermometer to test for doneness. Aim to remove the salmon from the oven when the internal temperature reads 135-140 degrees.

The last time I went to Costco I stocked up on chickpeas, and if I’m being honest, this recipe, my chickpea cookies & hummus are the only ways my kids love to enjoy garbanzo beans.

Can I blame them? It’s delish!

FUNFETTI COOKIE DOUGH

INGREDIENTS
1 can chickpeas, drained and rinsed
½ cup oat flour
¼ cup almond butter
3 tbsp maple syrup
1 tsp vanilla extract
⅓ cup sprinkles

DIRECTIONS
1. To a food processor, add chickpeas, oat flour, almond flour, maple syrup, and vanilla extract. Pulse to begin, then turn the food processor on to blend until smooth. You can stop and scrape the sides.

2. Add the colorful rainbow sprinkles and blend for 5 seconds to combine. Enjoy!

3. Store in an air-tight container in the fridge for up to 7 days.

Hands up if you get just as excited for asparagus season as I do! 🙋🏻‍♀️🙋🏻‍♀️

You can cook asparagus in so many different and delicious ways, but if you haven’t tried lemony traeger grilled asparagus, this is your sign to make it happen!

TRAEGER ASPARAGUS

INGREDIENTS
1 lb asparagus, tough ends removed
1.5 tbsp avocado oil
½ large lemon juiced
½ tsp garlic powder
½ tsp onion powder
¼ tsp sea salt
¼ tsp pepper

DIRECTIONS
1. When you’re ready to cook your easy-smoked asparagus turn the Traeger pellet grill on to smoke and leave the lid open for 5 minutes to start the smoke. Close the lid and set the temperature to 350 degrees F. It will take about 15 minutes to get up to the temperature. 

2. Season the asparagus by drizzling on the oil, lemon juice, garlic powder, onion powder, sea salt, and pepper. Mix the asparagus with the seasoning with your hands to ensure every stalk is coated.

3. Place asparagus on the grill grates in a single layer, and close the lid. Cook for 10 minutes, and flip the asparagus over. Close the lid and cook for another 5-10 minutes (thinner stalks won’t take as long), and then remove this easy side dish from the grill!

4. The asparagus will be bright green with bits of browning when it is done. Top with a little lemon zest or parmesan cheese if you’d like.
