Good news. I’m feeling mucho better. So much better that I’m heading to Pump this morning! Life’s much more fun when you go out and do stuff.
When I was growing up it seems like Sundays were the special breakfast day. We’d have our bigger sit down breakfast together. A couple meals I specifically remember were my dads biscuits (he’s the best at making them!) with honey and/or homemade strawberry jam and hard boiled eggs, and another breakfast was super eggs.
I love super eggs. What makes them super is all the good stuff in there.
The mix I remember from my childhood was filled with potatoes, onions, ham, mushrooms, eggs and cheese.
Well I took the super eggs idea and made them my own. You should call them super eggs because they are super easy, super good for you and super yummy!
Dice your sweet potato and cook in a skillet coated with olive oil spray. Add a pinch of sea salt and pepper. Allow to cook for 15ish minutes, or until the sweet potatoes are tender to the bite.
Add in diced onion, chopped kale and chopped mushrooms. Cook for 4-5 minutes then toss in a small handful of spinach.
Pour in the eggs and cook until set. Plate and top with a sprinkle of sharp cheddar.
Every bite is so tasty!
