If you’re unsure of where to start when cooking with a Traeger pellet grill, this easy pork loin recipe will give you perfect results every time.
Many other recipes you’ll see don’t have you rotate the pork throughout the cooking process, but that’s a mistake. Turning the pork loin while it cooks ensures even cooking, and a crisp outside all around.
What type of pellets to use for pork roast
For this easy recipe, I used the signature wood pellet mix, which is a combination of maple, hickory, and cherry natural wood pellets.
The smoke flavor that comes from that combination of wood chips works really well with pork (and other cuts of pork – pork shoulder, a rack of pork, pork chops, and different cuts of meat).
But you don’t have to just use that blend! Alder, apple, cherry, hickory, pecan, and cherry are all really good options for Traeger pork recipes.

How to make Traeger smoked pork loin roast in simple steps
Step 1: In a small bowl combine the olive oil, Italian seasoning, sea salt, garlic powder, and pepper. Using a basting brush, spread the herb mixture all over the large roast. You can allow the mixture to marinade for up to 2 days, or cook it right away. If your pork loin has a large bit of silver skin on it, you can cut that off before adding the marinade.
Step 2: When you’re ready to cook your pork loin, turn the Traeger on to smoke and leave the lid open for 5 minutes to start the smoke. Close the lid and set the temperature to 350 degrees F. It will take about 15 minutes to get up to the temperature. Make sure you have enough wood pellets in the pellet smoker to keep the high temperatures.
Step 3: When the electric smoker is up to temperature, place the seasoned pork loin on the grill grates fat side down. Close the lid and cook for 20 minutes. After 20 minutes, flip the meat over and cook for another 20 minutes. Continue to rotate the pork every 15 minutes until the internal temperature of the pork is at least 145 degrees F.
Step 4: Place the pork on a cutting board and let it rest for 5 minutes covered in aluminum foil. This is the best way to end with a juicier pork roast!
Step 5: Using a sharp knife, slice the pork and serve!
NOTE: For more medium-well-cooked pork, remove it from the grill when the internal temperature of the meat gets to 155 degrees F.

How to store
Storing leftovers is a great option because it keeps well in the fridge. Once the pork has fully cooled to room temperature, add it to an airtight container and keep it in the fridge for up to 5 days.
Leftover pork can be enjoyed cold or reheated in a medium-heat skillet. It’s a great option to dice and add to salads for a quick, easy, and flavorful protein option.
Cooked pork loin freezes really well too! Add to a freezer bag, label and date it, and freeze for up to 6 months.
When you’re ready to defrost and use the frozen pork, place it in the fridge overnight to defrost. You can also place it on the counter to defrost or add it to a dish in a warm oven to come to room temperature faster.
Substitutions

Pork loin roast – While this recipe calls for a 2lb roast, you can definitely increase and use a larger size. Simple increase the cooking time. Substitute almost any pork cut in for the loin using the same marinade, but adjust the cooking time depending on the size of meat that you end up using.
Extra virgin olive oil – Avocado oil is an excellent alternative to use in place of olive oil. You can also use melted coconut oil – use refined coconut oil to omit any coconut flavor.
Italian seasoning – Herbs like dried oregano, thyme, basil, and rosemary will all replace Italian seasoning nicely. If you’re a fan of caramelization to your pork, mix in a little brown sugar when creating your spice mix.
Garlic powder – Onion powder is a good substitution for garlic powder in this recipe. You can also add dried onion powder into the mix in addition to all the other seasonings! Garlic granules and dehydrated garlic will work well here too.
