This veggie loaded green smoothie is veggie loaded to the max! Not only is it packed with spinach, but we’re adding frozen cauliflower in for extra creaminess + volume. You would never guess that this white veggie is hidden in here. And neither would your kids!

If you’ve been around here for a minute, you know I love green smoothies. They are such a simple way to get veggies in, and the beauty of adding spinach or kale into a smoothie is that you don’t even taste it. Add some fruit + a nut butter and the flavor transforms completely.

What’s in this veggie loaded green smoothie?

Spinach – vitamin A, vitamin c, vitamin K1, folic acid, iron and calcium

Frozen cauliflower rice – high in fiber and b vitamins

Coconut milk – healthy fats and adds creaminess to the smoothie

Banana – potassium rich and adds sweetness

Cashew butter – good source of fats, vitamin e, magnesium and zinc

Collagen peptides – improves skin and nails and helps with gut health

Tools for perfect green smoothies

The blender really does matter when you’re blending greens into your favorite smoothie. I absolutely love the kitchenmaid k400 blender. It has a smoothie button option and blends for 30 seconds to creamy perfection.

If your blender isn’t as powerful as you’d like, here’s a tip to still end with a non-gritty smoothie.

Add your liquid + greens and fully blend that first. After your greens are broken down and no longer pieces, then add the remaining ingredients. This is how I used to make my green smoothies before my powerful blender upgrade.

How to make a green smoothie

Simply add all of your ingredients into a high speed blender and blend on high for 30 seconds, until smooth and creamy.

If you don’t have a high speed blender, use this tip of first blending the greens + liquid, then adding the remaining ingredients and fully blending on high for 30 seconds.

Ingredients

  • 2 cups coconut milk (from a carton)
  • 3 cups spinach
  • 1 ripe banana
  • 1 cup frozen cauliflower rice
  • 2 tbsp cashew butter
  • 2 scoops vanilla protein powder
  • 2 scoops collagen peptides (optional)

Instructions

  • Combine all the ingredients together in a high speed blender and blend for 30 seconds on high.

Notes

If you don’t have a high speed blender, use this tip of first blending the greens + liquid, then adding the remaining ingredients and fully blending on high for 30 seconds.
You can substitute your favorite nut or seed butter for the cashew butter.
