Line a loaf pan with parchment paper. To a food processor or blender, add the peanuts, dates, and vanilla extract. Pulse to begin to break the nuts and dates into smaller pieces.
When the nuts and dates look like they’re combined and in much smaller pieces, add the powdered egg whites and 2 tablespoons of water. Pulse again to begin to combine.
Add to the bottom of the pan and press to smooth. Add more chocolate chips on the top if you’d like. Chill in the fridge for 30 minutes, then cut into bars. Enjoy!
You can also individually wrap each bar in parchment paper, and then add it to a storage bar. Keep in the fridge for up to 1 week, or in the freezer for up to 6 months.
