Pumpkin Muffin Recipe

Almond flour pumpkin muffins with the best fluffy texture!  They are gluten free, but you'd never know!

INGREDIENTS: – eggs – pumpkin puree – coconut oil – vanilla extract – apple cider vinegar – almond flour – coconut sugar – cinnamon – pumpkin pie spice – baking soda – sea salt – rolled oats

Step 1: Preheat the oven to 350 degrees F. Prepare a muffin tin with muffin liners, or use silicone muffin liners instead of paper liners.

STEP 2: In a large bowl combine the eggs, pumpkin puree, oil, vanilla and apple cider vinegar. Whisk well to combine the wet ingredients.

STEP 3: Into the same bowl, add  dry ingredients and mix the dry ingredients together  Using a measuring cup, spoon the pumpkin muffin batter into the prepared muffin liners.

STEP 4: If you’re making the streusel, mix the almond flour, oats, and coconut sugar together.  Next, stir in the melted coconut oil.

STEP 5: Sprinkle the streusel mixture over the top of each muffin and bake!
