Pumpkin Protein Bites

My no-bake pumpkin protein balls are the perfect blend of nutritious and yummy, a great option for pairing with your pumpkin spice latte.

Say goodbye to your sweet tooth — these naturally-sweetened chocolate-dipped pumpkin spice energy balls are packed with healthy fats, fiber, and a generous dose of protein to squash your cravings.

INGREDIENTS: – chickpeas – cashew butter – pure maple syrup – canned pumpkin puree – vanilla whey protein powder – oat flour – coconut flour – cinnamon – sea salt – dark chocolate chips – coconut oil – pretzel sticks and candy eyeballs

Step 1: In a food processor add the ingredients and pulse until combined. Chill the dough for at least 1 hour. After the chill, scoop out heaping tablespoons of the batter and roll into balls.

STEP 2: If you’re making spiders, break pretzel sticks in half and push 8 legs into the ball. Freeze the pumpkin protein balls while you melt the chocolate.

STEP 3: Melt the chocolate and coconut oil. Once melted, drop the protein balls and spiders into the chocolate. Place on parchment paper, and add the candy eyeballs. Chill and enjoy!
