How to make whipped cottage cheese toasts

Step 1: To a food processor or blender, add the cottage cheese, lemon zest, and pepper. Blend until smooth and creamy.

Step 2: Toast the bread. Mix the tomatoes with 2 tbsp basil and a pinch of sea salt.

Step 3: Now assemble your toasts! Spread a thick layer of the blended cottage cheese on a slice of toast. On top of the cottage cheese add the tomatoes, a drizzle of honey, minced basil, and micro greens (optional). Repeat and enjoy!

NOTE: To make thyme-infused honey slightly warm the honey with a few sprigs of fresh thyme. Keep the thyme in for as long as you’d like – the longer it stays the stronger the thyme flavor will be.
