Veggie Loaded Green Smoothie

This veggie loaded green smoothie is veggie loaded to the max! Not only is it packed with spinach, but we're adding frozen cauliflower in for extra creaminess + volume. You would never guess that this white veggie is hidden in here. And neither would your kids.

Ingredients

  • 2 cups coconut milk (from a carton)
  • 3 cups spinach
  • 1 ripe banana
  • 1 cup frozen cauliflower rice
  • 2 tbsp cashew butter
  • 2 scoops vanilla protein powder
  • 2 scoops collagen peptides (optional)

Instructions

  • Combine all the ingredients together in a high speed blender and blend for 30 seconds on high.

Notes

If you don't have a high speed blender, use this tip of first blending the greens + liquid, then adding the remaining ingredients and fully blending on high for 30 seconds.
You can substitute your favorite nut or seed butter for the cashew butter.
