Buckwheat Oat Pancake Mix (for 4 batches)
2cupsoat flour(ground from oats)
2cupsbuckwheat flour(ground from buckwheat groats-NOT toasted buckwheat flour)
4tspbaking powder
2tspbaking soda
2tspsea salt
2tspcinnamon
Ingredients to make pancakes
1cupplain yogurt
2eggs
½cupwater
3tbspmelted coconut oil or melted butter
1tspvanilla extract
1cupbuckwheat oat pancake mix
Instructions
Directions for pancake mix
Combine all the ingredients into a bowl. Whisk to combine and store in a airtight container until you are ready to make pancakes.
Directions to make pancakes
Heat an electric griddle or non-stick skillet to medium heat (or 350 on an electric griddle).
Add your wet ingredients into a bowl and whisk to combine. Add 1 cup pancake mix and stir until just combined. If adding the optional ingredients, stir in now.
Add butter or coconut oil to your griddle or skillet and pour ¼ cup of the batter for each pancake. Cook for 3-4 minutes, until little bubbles begin to show up on top, then flip. Cook another 2-3 minutes until done. Repeat with remaining batter.
Notes
Optional: extra add ins to customize your mix (½ cup shredded carrot, ½ cup shredded zucchini, ½ cup berries or ½ pumpkin puree)
