Mocha Chocolate Chip Muffins
Hello delicious healthy mocha chocolate chip muffins! The pairing of chocolate with a hint of coffee (decaf if you’re making these for kiddos!!), is quite amazing! These healthy muffins are naturally sweetened with a little maple syrup and applesauce, they are totally oil-free, are gluten-free, and still incredibly moist muffins! Coffee brings out the chocolate flavor even more, which makes these treats even more chocolatey. There’s definitely nothing wrong with that!
Pre-heat your oven to 350 degrees. Line 9 muffin holes with paper or silicone liners.
In a large bowl combine the almond flour, coconut flour, cocoa powder, baking soda, sea salt). Stir until thoroughly mixed, leaving no lumps.
Add the apple sauce, maple syrup, egg, coffee, and vanilla and stir to combine. Stir in the chocolate chips.
Add the muffin batter into 9 regular sized muffin tins. Top each muffin with a few additional chocolate chips if desired.
Bake for 20-22 minutes. Remove from the oven when a toothpick comes out clean. Allow the muffins to cool before eating.
