Apple Potato Hash with Sausage
The combination of apple chicken sausage, potato, and diced apple come together for a flavorful and easy-to-make dinner hash. Put an egg on it and have this apple potato hash for breakfast, lunch, or dinner!
- 1 tbsp avocado oil
- 3 red potatoes, diced
- 12 oz apple chicken sausages, diced
- 2 green onions, diced
- 2 cups frozen cut spinach
- 1 apple, diced
- ½ tsp paprika
- 1/2 tsp sea salt
- 1/4 tsp pepper
- 1-2 eggs per person
Preheat a large skillet over medium-high heat with the oil. Add the potatoes and a pinch of sea salt. Saute for 15-20 minutes, until the potatoes are crispy on the outside and soft on the inside.
Add in the sausage and onion next and saute for 5 minutes. Stir in the spinach to defrost for a couple of minutes. Add the diced apple, paprika, sea salt, and pepper. Heat the apples through, then pile on plates.
Add a little oil to the pan and cook the eggs your favorite way. Add the eggs on top of your hash and enjoy!
