Banana Protein Muffins

Let me welcome you to these banana protein muffins! Featuring whole wheat flour, oats, bananas, maple syrup, protein powder, and walnuts, these healthy muffins are the perfect afternoon snack, or easy breakfast to prep in advance. Enjoy a little more staying power with the added protein!

  • Pre-heat your oven to 350 degrees. Coat a 6 muffin tin with oil or line with muffin liners.
  • In a large bowl mix together the flour, oats, protein powder, cinnamon, baking powder, sea salt and half the walnuts.
  • In a smaller bowl mix together the mashed banana, maple syrup, egg and vanilla extract. Stir the wet into the dry until just mixed.
  • Pour into muffin tins until they are filled to the top. Top batter with the raining walnuts. Bake for 25-28 minutes, or until a toothpick comes out clean after being inserted into the center. Allow to cool for 10 minutes before removing from muffin tin to cool on a wire rack.
