Creamy Black Bean Soup

  • Combine all the ingredients in a crockpot.  Stir and cook on low for 6 hours.

  • After 6 hours puree the black bean soup in a blender (in batches) to create a smooth soup, or with an immersion blender in the crockpot. Serve with your favorite taco toppings - a few of mine are sour cream, cilantro, and diced avocado!

Notes

To make this on the stovetop, heat a large pot to medium heat.  Add 1 tbsp avocado oil along with the onion and jalapeno.  Saute for 5 minutes, until fragrant.  Add the remaining ingredients and simmer for 20 minutes.  Blend in the same way as step 2.
