Chorizo Mac and Cheese
Chorizo mac and cheese is such a comforting meal! We’re taking mac and cheese up a notch with chorizo sausage, sauteed vegetables, and an easy-to-make sauce in the blender. The chorizo sausage, vegetables, pasta, and cheese sauce melt together and you’re left with a flavorful, delicious, and EASY dinner!

- 1 lb chorizo sausage
- 2 cups mushrooms diced
- 1 yellow onion diced
- 1 block silken tofu
- ¼ cup milk (dairy or non-dairy option)
- ½ tsp sea salt
- ½ tsp pepper
- 1 tsp stone-ground mustard
- 12 oz elbow pasta
- 4 cups cheddar cheese shredded
In a large skillet over medium-high heat add the sausage. Break into pieces and cook until browned. Add the mushroom and onion into the pan with the chorizo and cook until both are soft, about 5 minutes.
While the sausage and vegetables cook, bring a large pot of water to a boil and cook the pasta according to package directions. Drain once done cooking.
To make the sauce blend together the tofu, milk, sea salt, pepper, and mustard.
Into the large skillet with the chorizo, add the pasta, creamy sauce, and cheese. Stir to combine and continue to heat over low heat for 3 minutes, or until the cheese has melted and the mac and cheese is creamy.
