Chorizo Mac and Cheese

Chorizo mac and cheese is such a comforting meal! We’re taking mac and cheese up a notch with chorizo sausage, sauteed vegetables, and an easy-to-make sauce in the blender. The chorizo sausage, vegetables, pasta, and cheese sauce melt together and you’re left with a flavorful, delicious, and EASY dinner!

Ingredients

  • 1 lb chorizo sausage
  • 2 cups mushrooms diced
  • 1 yellow onion diced
  • 1 block silken tofu
  • ¼ cup milk (dairy or non-dairy option)
  • ½ tsp sea salt
  • ½ tsp pepper
  • 1 tsp stone-ground mustard
  • 12 oz elbow pasta
  • 4 cups cheddar cheese shredded

Instructions

  • In a large skillet over medium-high heat add the sausage.  Break into pieces and cook until browned. Add the mushroom and onion into the pan with the chorizo and cook until both are soft, about 5 minutes.
  • While the sausage and vegetables cook, bring a large pot of water to a boil and cook the pasta according to package directions. Drain once done cooking.
  • To make the sauce blend together the tofu, milk, sea salt, pepper, and mustard.
  • Into the large skillet with the chorizo, add the pasta, creamy sauce, and cheese. Stir to combine and continue to heat over low heat for 3 minutes, or until the cheese has melted and the mac and cheese is creamy.
