       To make this smoked salmon recipe, add the crema cheese, feta, smoked salmon, green onion, dried cranberries, and pepper into a large bowl. Mix until it is all combined well.

       On a large cutting board, add the tortillas. Spread the mixture evenly over each tortilla, and add the microgreens.

       Tightly roll the tortilla and wrap it with a big piece of plastic wrap. Refrigerate the rolls for 2 hours or overnight. Once they are firm, slice each roll into 1-inch pieces. Serve chilled.

You can easily prepare these rolls up to 3 days in advance. Any longer you risk the tortilla getting soft.
