Chewy Peanut Butter Cookies

Let the obsession begin – this soft peanut butter cookie recipe is easy, delicious, and better for you!

They mix in 1 bowl, and are made with 7 simple ingredients.  If chocolate and peanut butter together are your thing, don’t skip the easy 2 ingredient chocolate coating!

INGREDIENTS: – powdered peanut butter – pure maple syrup – vanilla extract – natural peanut butter – oat flour – vanilla protein powder – baking powder – dark chocolate chips – coconut oil

Step 1: Line a sheet pan with parchment paper. In a large bowl add the water and powdered peanut butter.  Whisk together to combine.

STEP 2: Into the same bowl, add the maple syrup, vanilla extract, and peanut butter and mix the wet ingredients fully.

STEP 3: Next, add the oat flour, protein powder, and baking powder and stir together until the dry ingredients are fully combined.

STEP 4: Spoon batter with a cookie scoop or spoon to the prepared cookie sheet.  Roll into ball, and then flatten with your hand.

STEP 5: Bake in the preheated for 9-11 minutes, or until the peanut butter cookie dough looks set and golden.

STEP 6: To add a chocolate coating, melt the chocolate chips and coconut oil together.  Dip half of the cookie into the chocolate

STEP 7: Cool on a wire rack until the chocolate is set. For quicker cooling, chill the cookies in the fridge. Enjoy!
