Let's Make Antipasto Salad with Dairy Free Italian Dressing!

For this recipe, we’re taking the components of antipasto, but making it better in salad form!

Antipasto is an Italian appetizer typically consisting of cured meats, cheese, olives, pickled vegetables, anchovies, and more.  It’s the first course and a delicious one at that!

This antipasto salad is an Italian-based salad filled with lettuce, grape tomatoes, salami, pepperoni, olives, red onion, roasted red peppers and tossed with a dairy-free creamy Italian dressing.

Spring greens, Grape tomatoes, Salami, Pepperoni, Green olives, Roasted red peppers, Red onion, Avocado oil mayonnaise, Extra virgin olive oil, Lemon juice, Italian seasoning, Garlic granules, Sea salt, Pepper

       In a large bowl combine the spring greens, tomatoes, salami, pepperoni, olives, roasted red peppers, and red onion.

       Make the salad dressing by whisking together the mayo, olive oil, lemon juice, Italian seasoning, garlic granules, sea salt, and pepper.

       To serve your antipasto salads, toss the dressing with the salad until fully combined, and enjoy!

A typical antipasto dish includes cheese as well.  Since we’re keeping this recipe dairy-free none is added. However, if you’d like to include cheese, go ahead!
