Antipasto Salad with Dairy Free Creamy Italian Dressing

This antipasto salad is an Italian-based salad filled with lettuce, grape tomatoes, salami, pepperoni, olives, red onion, roasted red peppers and tossed with a dairy-free creamy Italian dressing. Think of a delicious antipasto platter, but made even better in veggie-loaded salad form!

What is antipasto?

Antipasto is an Italian appetizer typically consisting of cured meats, cheese, olives, pickled vegetables, anchovies, and more.  It’s the first course and a delicious one at that!

Antipasto, but make it better

For this recipe, we’re taking the components of antipasto, but making it better in salad form!  If you know me, you know I’m all about adding more veggies into my life, and this is the perfect example of how to do that.

We’ll take all the antipasto deliciousness – salami, pepperoni, olives, and then add loads of veggies along with it.  Today we’re using lettuce, Organic Juno® Bites Red Grape Tomatoes, red onion, and roasted red pepper.  

But there is no limit!  Have cucumber and bell peppers in your kitchen?  They’d be a great addition as well!

Organic Juno® Bites Red Grape Tomatoes

One of my favorite vegetables we’re adding in is Pure Flavor® Organic Juno® Bites Red Grape Tomatoes!  These tomatoes are super juicy and delicious!  They’re USDA Organic Certified and grown in a greenhouse, meaning no pesticides are used in the process of growing these tasty tomatoes.

They are the perfect bites to pop in your kiddos hands and enjoy as a snack.  They’re also flavorful and fantastic in this recipe!

Antipasto salad with cheese

A typical antipasto dish includes cheese as well.  Since we’re keeping this recipe dairy-free none is added.

However, if you’d like to include cheese mini fresh mozzarella balls would be a fantastic addition.  As would sliced provolone and Havarti cheese.  Make it your own and use what you have on hand.

How to make it

  1. In a large bowl combine the spring greens, tomatoes, salami, pepperoni, olives, roasted red peppers, and red onion.
  2. Make the salad dressing by whisking together the mayo, olive oil, lemon juice, Italian seasoning, garlic granules, sea salt, and pepper.
  3. To serve, toss the dressing with the salad until fully combined and enjoy!
