Antipasto is an Italian appetizer typically consisting of cured meats, cheese, olives, pickled vegetables, anchovies, and more. Itโs the first course and a delicious one at that!
Antipasto, but make it better
For this recipe, weโre taking the components of antipasto, but making it better in salad form! If you know me, you know Iโm all about adding more veggies into my life, and this is the perfect example of how to do that.
Weโll take all the antipasto deliciousness – salami, pepperoni, olives, and then add loads of veggies along with it. Today weโre using lettuce, Organic Junoยฎ Bites Red Grape Tomatoes, red onion, and roasted red pepper.
But there is no limit! Have cucumber and bell peppers in your kitchen? Theyโd be a great addition as well!

Antipasto salad with cheese
A typical antipasto dish includes cheese as well. Since weโre keeping this recipe dairy-free none is added.
However, if youโd like to include cheese mini fresh mozzarella balls would be a fantastic addition. As would sliced provolone and Havarti cheese. Make it your own and use what you have on hand.
What youโll need for antipasto salad
- Spring greens
- Pure Flavorยฎ Organic Junoยฎ Bites Red Grape Tomatoes
- Salami
- Pepperoni
- Green olives
- Roasted red peppers
- Red onion
- Avocado oil mayonnaise
- Extra virgin olive oil
- Lemon juice
- Italian seasoning
- Garlic granules
- Sea salt
- Pepper
How to make it
- In a large bowl combine the spring greens, tomatoes, salami, pepperoni, olives, roasted red peppers, and red onion.
- Make the salad dressing by whisking together the mayo, olive oil, lemon juice, Italian seasoning, garlic granules, sea salt, and pepper.
- To serve, toss the dressing with the salad until fully combined, and enjoy!

Antipasto Salad with Dairy Free Creamy Italian Dressing
Ingredients
- 12 cups spring greens
- 1 pint Pure Flavorยฎ Organic Junoยฎ Bites Red Grape Tomatoes, quartered
- 2 oz salami, sliced
- 2 oz pepperoni, diced
- 1/4 cup green olives
- 1/4 cup roasted red peppers, sliced
- 1/4 cup red onion, slivered
- 1/4 cup avocado oil mayonnaise
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1/2 tbsp Italian seasoning
- 1/4 tsp garlic granules
- 1/8 tsp sea salt
- 1/8 tsp pepper
Instructions
- In a large bowl combine the spring greens, tomatoes, salami, pepperoni, olives, roasted red peppers, and red onion.
