Black Bean Soup

Take 5 minutes in the morning and prep this easy creamy black bean soup for your crockpot.

After a day of cooking, you’ll have a healthy, nourishing warm bowl of soup waiting to enjoy! Full of protein, fiber and flavor, this easy soup recipe is a canvas for your favorite toppings.

        Combine all of the ingredients in a crockpot.  Stir and cook on low for 6 hours (or 3 hours on high).

        After 6 hours puree the black bean soup in a blender or food processor (in batches) to create a smooth soup, or use an immersion blender in the crockpot.

        Serve this pureed soup with your favorite taco toppings like sour cream, fresh cilantro, tortilla chips, lime wedges and diced avocado!
