Easy Creamy Black Bean Soup Made in the Crockpot

One of the tricks I’ve learned that works for me is to have nourishing foods available at all time. When more healthy foods are around I will more likely choose to eat them.

Sometimes I prep food ahead. Sometimes I just want a quick and easy meal.

That includes dinner time too.

While this crockpot creamy black bean soup takes hours in the crockpot, your hands on time is barely anything!

By taking 5 minutes to start the crockpot in the morning and 5 minutes to blend up the meal at the end of the day, you’ll be left with a wonderfully nutritious and healthy dinner with very little effort.  

That’s why I love crockpot recipes so much.  Very little effort, but big reward!

How to make this easy black bean soup recipe in a slow cooker

Step 1: Combine all of the ingredients in a crockpot.  Stir and cook on low for 6 hours (or 3 hours on high).

Step 2: After 6 hours puree the black bean soup in a blender or food processor (in batches) to create a smooth soup, or use an immersion blender in the crockpot.

Step 3: Serve this pureed soup with your favorite taco toppings like sour cream, fresh cilantro, tortilla chips, lime wedges, and diced avocado! It’s delicious with no knead whole wheat focaccia bread too!

How to make this healthy black bean soup recipe on the stove top

  1. To make this creamy black bean soup on the stovetop, heat a large pot to medium heat.
  2. Add 1 tbsp avocado oil or olive oil along with the diced onion and jalapeño.  Saute the vegetables for 5 minutes, until fragrant.
  3. Add the remaining ingredients and simmer for 20 minutes.
  4. Blend in the same way as step 2 in the recipe.

How to make a dairy free sour cream

If you love sour cream, but want to keep this soup dairy free, try this cashew cream out!

  • In a blender add ¼ cup cashews and grind into a powder.
  • Next, add ¼ cup water and ¼ tsp cumin, then blend until fully combined.

Now you are left with a creamy dairy free sour cream to enjoy with your soup!

Substitutions

Below you’ll find a list of substitutions that will work well in this tasty soup recipe.

Black beans – Instead of using cans of black beans, you can also make this hearty soup with dried beans. Simply soak the dry beans overnight and add into the pot with extra liquid. You can also swap black beans for pinto beans or great northern beans.

Chicken broth – Make this a vegetarian soup by swapping the chicken broth for vegetable broth.

Onion – Any type of onion will work here – try red onions or shallots!

Jalapeño – Try chipotle peppers for more heat, or opt for sweet bell pepper to take all the heat out of this recipe.

Chili powder – For a smoky flavor, you can use chipotle chili powder. For more heat, add in a little cayenne pepper.

Garlic – If you don’t have fresh garlic on hand, you can substitute in garlic powder or garlic granules.
