Creamy Black Bean Soup (Crockpot)

One of the tricks I’ve learned that works for me is to have nourishing foods available at all time.  When more healthy foods are around I will more likely choose to eat them.

Sometimes I prep food ahead. Sometimes I just want a quick and easy meal.   That includes dinner time too.

While this crockpot creamy black bean soup takes hours in the crockpot, your hands on time is barely anything!

By taking 5 minutes to start the crockpot in the morning and 5 minutes to blend up the meal, you’ll be left with a wonderfully nutritious and healthy dinner with very little effort. 

That’s why I love crockpot recipes so much.  Little effort, but big reward!

How to make creamy black bean soup in a slow cooker

  1. Combine all the ingredients in a crockpot.  Stir and cook on low for 6 hours (or 3 hours on high).
  2. After 6 hours puree the black bean soup in a blender (in batches) to create a smooth soup, or with an immersion blender in the crockpot. Serve with your favorite taco toppings – a few of mine are sour cream, cilantro, and diced avocado!

How to make creamy black bean soup on the stove top

To make this on the stovetop, heat a large pot to medium heat.  Add 1 tbsp avocado oil along with the onion and jalapeno.  Saute for 5 minutes, until fragrant.  Add the remaining ingredients and simmer for 20 minutes.  Blend in the same way as step 2.

How to make a dairy free sour cream

If you love sour cream, but want to keep this soup dairy free, try this cashew cream out! In a blender add 1/4 cup cashews and grind into a powder.

Next, add 1/4 cup water and 1/4 tsp cumin, then blend until fully combined.

I think a lot of people discount their cholesterol numbers! Good for you for getting those puppies down!

Good for you, Heather! I had an echo done last summer and my cholesterol was just a bit high then. I’m sure it has dropped quite a bit since I’ve started eating vegan. So many great things about eating healthy!

I should really get my cholesterol checked- my dad used to have high cholesterol even though he was only a little overweight, but he cleaned up his diet and doesn’t have to take medicine anymore. It is amazing what healthy eating can do!

I love crockpot recipes. I alot of times crockpot recipes are a lot of meat (which I have been trying to limit). I love this vegetarian soup. yum!
