Cucumber Salad

This cucumber shrimp peanut salad is packed with delicious flavor, the best crunch from mini cucumbers, and loaded with protein thanks to shrimp!

Healthy fat from avocado rounds out this amazing lunch or dinner. You’re going to want to keep making this salad on repeat because it is that good!

INGREDIENTS: – jumbo shrimp – avocado oil – sea salt – garlic granules – sriracha – black pepper – peanut dressing – mini cucumbers – avocado – dry roasted peanuts – fresh basil

Step 1: Start by marinading the shrimp, then placing on a sheet. Bake until cooked!

STEP 2: Make the peanut dressing by whisking peanut butter, rice vinegar, coconut aminos, maple syrup, sriracha, garlic granules, ground ginger, and water together.

STEP 3:  Make the cucumber salad by mixing together the cucumber, avocado, shrimp, and peanut dressing in a large bowl.

Top it with basil and peanuts. Enjoy!
