To the bowl of a food processor, add the roughly chopped onion, cilantro, garlic, sea salt, and pepper. Pulse until the onion is broken down into small pieces.
Add the tomatoes and tangy lime juice and pulse again until the tomatoes are in small pieces, or blend to get a smooth salsa. The tomato juice will help with blending. Taste the tomato mixture and add more salt/pepper if you’d like.
Pour into a serving bowl and enjoy! Makes about 3-3.5 cups of salsa.
