Blend the batter. Add the eggs, milk, vanilla, whole wheat flour, baking powder, cinnamon, and sea salt to a blender and blend until smooth.
Add the apple. Add the diced apple to the batter and pulse a few times until just combined, keeping small apple pieces throughout.
Cook the crepes. Pour a small amount of batter into a greased, non-stick skillet over medium to medium-high heat, tilting the pan to spread it into a thin, even layer. Cook for 1 to 2 minutes per side, until golden brown, then roll up while warm. Repeat with the remaining batter.
Make the dip. Blend the cottage cheese and cream cheese until smooth, then sweeten with honey to taste.
Serve. Roll up the crepes or slice into rounds, drizzle with the honey dip, and dust with a little extra cinnamon before serving.
Notes
Preheat the pan: Make sure your pan is fully preheated before the first crepe.Don't rush the flip: Let the edges set first so the crepes hold together.Keep the pulse short: Pulse the apple just a few times so you keep small pieces in the batter.Go thin: If the batter seems thick, add a small splash of milk.Roll while warm: Warm crepes roll up without cracking.Storage: Store leftover crepes and dip in separate airtight containers in the fridge for up to 4 days.Freezing: Freeze cooled crepes with parchment between each one for up to 3 months. Don't freeze the dip.
