Easy One Bowl Whole Wheat Blueberry Bread Recipe

Whole wheat blueberry bread is nourishing, easy to make, and perfect to prep in advance for an easy breakfast or snack addition! This loaf is super moist with bursting juicy blueberries dotted throughout the entire loaf. It is made without any butter and white whole wheat flour for soft and flavorful bread.

  • Preheat oven to 350 degrees F. Coat a loaf pan with oil or parchment paper.
  • In a large bowl, add the eggs, oil, applesauce, buttermilk, and vanilla extract. Whisk until fully combined.
  • Into the same bowl, add the flour, sugar, baking powder, and salt and mix the dry ingredients into the wet ingredients, mixing until just about combined (you may see a few dry spots remaining – that’s okay!). Stir in the blueberries, mixing until just combined.
  • Pour the batter into the prepared loaf pan. Sprinkle the top evenly with 1 tbsp sugar and 1 tbsp rolled oats. Bake for 50-60 minutes; or until a toothpick inserted into the center of the loaf comes out clean. Let it cool completely to room temperature before removing it from the pan.
