Easy Vegetable Beef Soup

Easy Vegetable Beef Soup is made with ground beef, potatoes, and frozen vegetables, making it a hearty, healthy, and simple weeknight dinner!  A batch of this will be a family favorite, and if you’re lucky to have leftovers - you’ll be set for lunch the next day!

Ingredients 

  • 1 lb ground beef
  • 1 white onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 3 cups Yukon gold potatoes, diced
  • 28 ounces tomato sauce
  • 4 cups beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 16 oz frozen mixed vegetables
  • Fresh parsley, for serving

Instructions 

  • In a large soup pot, add the ground beef over medium-high heat, cooking until browned, breaking it into small pieces as it cooks.
  • Add the onion to the beef and cook until softened, about 5 minutes. Add the minced garlic and salt, cooking another minute. Add the potatoes, tomato sauce, beef broth, basil, and oregano.
  • Bring to a boil. Reduce the heat to medium, and boil until the potatoes are tender, about 15-20 minutes.
  • Add the mixed vegetables and cook for another 5 minutes, or until warmed through.
  • Serve topped with fresh parsley, if desired, with a roll or baguette.
