Healing Chicken Turmeric Soup

Healthy golden healing chicken turmeric soup is everything you want when you’re searching for comfort and nourishment together. In this warming great recipe, we are combining loads of veggies, protein-packed chicken, turmeric, ginger, and all the goodness of bone broth. The little secret ingredient (red curry paste) pairs so well with turmeric and coconut milk. It’s a big hit with the whole family – the kind of soup you’ll want to sip this soup up over and over again!

  • Heat a large dutch oven (or a large pot) to medium heat and add the ghee. Once melted, add the chicken breast, ½ tsp sea salt, and ½ tsp pepper. Sear on one side for 4-5 minutes, flip, and sear on the other side for 4-5 minutes. You’re looking for a nice golden color on the chicken.

  • Add the onion, celery, and carrots into the pot, along with the remaining sea salt and pepper. Saute the veggies with the chicken for 3-4 minutes. Add the garlic and ginger and saute for 1 minute.

  • Next, pour in the broth. Stir in the turmeric, thyme, bay leaf, and red curry paste. Simmer for 20 minutes, or until the chicken is fully cooked through.

  • Remove the chicken from the soup and turn the heat off. Shred chicken, or dice tit into bite-size pieces. Stir in the kale and coconut milk. Lastly, add the chicken pieces back into the soup.

  • Serve as is, with your favorite crusty bread, or even over rice!
