  • Preheat the oven to 350 degrees F. Line an 8x8-inch baking pan with parchment paper.
  • In a large bowl, whisk together the egg, melted coconut oil, maple syrup, and vanilla extract until smooth.
  • Add the almond flour and cocoa powder to the bowl and stir until a well-combined batter forms.
  • Fold in the grated zucchini (liquid squeezed out) and the dark chocolate chips until evenly distributed throughout the batter.
  • Spread the batter evenly into the prepared pan and sprinkle a few extra chocolate chips on top.
  • Bake for 20-25 minutes, until the edges look set and a toothpick inserted in the center comes out with just a few moist crumbs.
  • Cool in the pan for at least 15 minutes before slicing into 9 squares for clean edges.
