Healthy Einkorn Pancakes with Spinach and Cottage Cheese

These fluffy einkorn pancakes with spinach are a healthy, high-protein breakfast made with cottage cheese and ancient grain einkorn flour. Naturally green, kid-friendly, and perfect for St. Patrick’s Day or an easy weekend brunch. Each serving gives you 20 grams of protein and 6 grams of fiber!

  • Add the eggs, cottage cheese, maple syrup, vanilla extract, and spinach to a blender. Blend until smooth, and the mixture turns bright green.
  • Pour the blended mixture into a large bowl. Add the einkorn flour, baking powder, and cinnamon. Whisk until everything is well combined and a smooth pancake batter forms.
  • Place a large skillet or cast-iron skillet over medium heat and lightly oil it with avocado oil, olive oil, or coconut oil.
  • Pour about ¼ cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges begin to set, then flip and cook the other side until golden brown. Repeat with the remaining batter and serve warm.
