Healthy No Bake Peanut Butter Coconut Oatmeal Bars

No-bake peanut butter coconut bars come together with just 8 pantry ingredients including oatmeal! They’re naturally sweetened with honey, loaded with the best delicious peanut butter flavor, and are a hit with adults and kids alike.   •  In a medium saucepan over medium-low heat add the creamy peanut butter, honey, and coconut oil. Heat the wet ingredients until everything is melted together, then stir in the remaining ingredients.
  • Line a loaf pan with parchment paper (or use a silicone loaf pan), and add the oat mixture to the prepared pan. Smooth mixture on the top. Place in the fridge to set.
  • Once the bars are fully chilled and hardened, cut into 8 pieces, and enjoy! If they are out on the counter at room temperature or in a warm environment for a long time they will soften slightly due to the high coconut oil content.
